Definition

Some bacteria produce toxins that can cause food poisoning when ingested Intoxication occurs rapidly after eating the food (minutes to hours)

 Other bacteria infect or invade the body, growing to high numbers inside the person and causing symptoms due to direct physical damage to the lining of the intestine, or from toxins released into the blood as they grow

 Symptoms may not occur until 2-5 days after the bacteria enters the body, and the infection can linger for weeks or longer

Only grown when NO OXYGEN is present, in canned products, vacuum packaged or under oil

Produces most poetnt neurotoxin known, usually fatal or leaving permanent disability.

Toxin deactivated by boiling for 10 minutes

Does not grow if pH is lower than 4.5

Fruits, vegetables, meat, fish and poultry, from soil and water.

Contamination from handlers with colds, sore throats or infected cuts, food slicers
