Definition
History:
Originally cocktail contained "stimulating liquor, composed of spirits of any kind, sugar, water, bitters.." Additions and refinements added over 19th cent. W/these additions, folks would ask for an "old fashioned" cocktail their grandfather might enjoy. - Hence the OF.

Ingredients:
- 2oz bourbon/rye whiskey
- 1tsp sugar/1 sugarcube
-2-3 dashes bitters (Angostura)

Directions:
Sugar doused w/bitters and dissolved/stirred w/a couple drops of water. Add whiskey, chill, add ice cubes, and garnish.

Definition
History:
Grandfather to modern martini. - Sweeter than typical dry martini.

Ingredients:
- 1 1/2oz Gin
- 1 1/2oz Sweet Vermouth
. (Vermouth = aromatized/fortified wine flavored w/various botanicals including roots, barks, flowers, seeds, herbs, and spices)
- 1tsp Maraschino liqueur
- 2 dashes orange bitters
- Lemon twist/garnish.

Directions:
Add all ingredients to mixing glass filled w/ice. Stir until cold and strain into chilled cocktail glass. Add twisted lemon peel garnish over cocktail to express its oils. Rub glass rim w/peel.

Definition
History:
Versatile/flexible drink w/gin or vodka base. Originally, martini required vermouth.

Ingredients:
- 2oz dry gin
- 1 oz dry vermouth
- 1 dash orange bitters

Directions:
Combine ingredients in mixing glass filled w/ice. Stir to chill and strain into chilled cocktail glass. Use twisted lemon peel or olive as garnish.

Ingredients:
- 4oz (rye) whiskey
- 1 oz sweet vermouth
- 4 dashes Angostura bitters
- Maraschino cherry as garnish

Directions:
Pour liquids into mixing glass filled w/ice. Stir to chill. Strain over chilled cocktail glass containing cherry.

Definition
History:
Adapted formula for perfect Manhattan. Swaps sweet vermouth aspect for blend of Maraschino liqueur and Amaro. Ramazotti can be used in place of Picon.

Ingredients:
-2oz Rye/other whiskey
- 1oz Dry vermouth
- 1/4oz Maraschino liqueur
- 1/4oz Amer Picon or a few dashes Angostura or orange bitters

Directions: Combine ingredients in iced glass and stir to chill. Strain into chilled cocktail glass.

Definition
Ingredients:
- 2oz light or gold rum.
- 3/4oz fresh-squeezed lime juice.
- 1tsp sugar

Directions:
Stir lime and sugar in cocktail sugar until sugar dissolved. Add rum, fill w/ice, and shake well for 10 sec before straining into chilled cocktail glass. Garnish w/lime wedge.

Definition
Facts/Advice:
Use 100% Agave tequila. Good quality tequila doesn't need sugar to balance acidity of lime juice.

Ingredients:
- Lime wedge and lime wheel for garnish
- 1 tbsp coarse salt for glass rims
- 2oz 100% agave tequila
- 2oz Cointrequ Triple Sec
- 3/4oz fresh lime juice

Directions:
- Run lime wedge around other rim of glass and dip rim in salt.
- Combine liquids in cocktail shaker w/ice and shake until chilled. Strain margarita into glass filled w/fresh ice. Garnish w/lime wheel.

Sidecar
(Brandy/Cognac)
Definition
History:
Similar to Margarita but w/cognac and lemon instead of tequila and lime. Quality matters w/good sidecar.
Cognac named after town in France, produced in wine-growing region. Must be made from specific grapes; twice distilled in copper pot stills, and aged at least two years in French oak barrels from Limousin or Troncais. Matures similar to whiskies and wine when aged in barrels.
- Cointreau = brand of triple sec produced in France. Drunk as an aperitif and digestif, in addition to common cocktail ingredient.

Ingredients:
- 2oz cognac, armagnac, or good California brandy.
- 1 oz Cointreau
- 3/4oz fresh lemon juice
- Superfine sugar for garnish

Directions:
Run lemon wedge along rim of glass before dipping in sugar.
Combine ingredients w/ice in shaker and shake to chill. Strain into glass and garnish orange or lemon twist.

Definition
History:
One of two cocktails named after French 75-mm field gun used in WW1.

Ingredients:
- 2oz gin
- 1oz fresh squeezed lemon juice
- 2tsp sugar
- champagne/sparkling wine
- lemon spiral & cocktail cherry for garnish

Directions:
Shake gin, lemon juice, sugar and ice in shaker until chilled. Strain into champagne flute and top with champagne. Stir gently and garnish.

(Vodka)
Definition
Advice:
High quality tomato juice is most crucial aspect.

Ingredients:
- 1tbsp celery salt
- 1/4 lemon cut in two wedges
- 1/2tsp Worcestershire sauce
- 1/4 tsp soy sauce
- 1/2tsp fresh ground pepper
- Dash cayenne pepper
- 1/4 tsp hot sauce (ex.: Franks)
- 1/2 tsp fresh grated horseradish/1tsp prepared horseradish
- 2oz vodka
- 4oz tomato juice
- 1 stick celery

Directions:
Rub glass rim w/lemon wedge and coat w/celery salt. Fill w/ice.
Add Worcestershire, soy, peppers, hot sauce, and horseradish to cocktail shaker, fill w/ice and add vodka, tomato juice, and juice from lemon wedge. Shake, taste, and adjust to taste. Strain into glass and garnish w/celery stalk.

Definition
Ingredients:
- 1 1/2 to 2oz Irish Whiskey
- 4oz Fresh-brewed coffee
- 1/2 to 1oz simple
- Heavy cream

Directions:
Whip cream to make thick. Combine whiskey, simple, and coffee in pre-warmed mug. Stir, and spoon in 1/2-1 inch of cream.

(Applejack/Apple Brandy)
Definition
History:
Applejack traditionally = concentrated cider. Now it's a blend of apple brandy and neutral spirits.

Ingredients:
- 2oz (Laird's) Applejack
- 3/4oz Grenadine
- 3/4oz Fresh squeezed juice from 1 lemon
- Dash Peychaud's bitters
- Lemon twist

Directions:
Combine liquids in shaker, fill w/ice, and shake vigorously. Strain into chilled coupe/martini glass. Squeeze lemon twist over surface skin-side-out to release fragrant oils. Rub glass rim w/skin side of lemon twist before discarding twist.

Definition
History/Advice:
Classic ratio = 1:1:1, but open to tinkering. Negroni common both on the rocks or straight up.

Ingredients:
- 1oz Dry gin
- 1oz Campari
- 1oz Sweet Vermouth

Direcions:
Combine ingredients in old fashioned glass filled w/ice, stir to combine, and twist thin orange peel over drink for aromatics before using as garnish.

Notes:
Similar ingredients to Negroni but swaps gin for whiskey.

Ingredients:
- 1oz Bourbon/rye whiskey
- 1oz Campari
- 1oz Sweet vermouth
- Orange twist or cherry garnish

Directions:
Stir ingredients in mixing glass filled w/cracked ice before straining into chilled glass. Garnish.

Definition
History/Notes:
New Orleans classic. Credited as being one of first true cocktails.

Ingredients:
- 1 tsp sugar
- 3-4 dashes Peychaud's bitters
- Few drops water
- 2oz Rye whiskey (Sazerac rye)
- 1tsp Herbsaint, Pernod, pastis, or absinthe
- Lemon peel

Directions:
Combine sugar, bitters, and water in mixing glass until sugar dissolved. Add rye, ice, and stir.
Pour Herbsaint (/anise-flavored spirit/aperitif), into chilled glass and rotate glass to coat inside, before discarding excess liquid. Strain liquid from mixing glass into serving glass. Twist lemon peel over drink.

Definition
History:
New Orleans classic.

Ingredients:
- 1/2tsp Benedictine
- 1 dash Peychaud's bitters
- 1 dash Angosutura bitters
- 3/4oz Rye whiskey
- 3/4oz Cognac
- 3/4 oz Sweet vermouth

Directions:
Combine all ingredients in mixing glass filled w/ice, stir, and strain into Old-fashioned glass.

Ramos Gin Fizz

Definition
History:
New Orleans originated drink, created by Henry C. Ramos.

Ingredients:
- 2oz Gin
- 1oz Cream
- 1 Egg white
- 1/2oz Lemon juice
- 1oz Lime juice
- 2tsp sugar, to taste
- 2-3 Drops orange flower water
- Seltzer

Directions:
Combine all ingredients excluding seltzer in shaker w/ice. Shake for about two min to emulsify ingredients. Alternatively, whisk until foamy before shaking w/ice for 20 sec.
Strain into chilled Collins glass and add oz or two of chilled Seltzer.

Mint Julep

Advice/Notes:
Vigorous muddling will create a mess- better to be just gentle enough to release aromatic oils. Fresh is also best.

Ingredients:
- 2-3oz bourbon
- 1tsp sugar
- 1tsp water/2 tsp simple
- 8-10 fresh mint leaves
- Mint sprig for garnish
- Crushed ice

Directions:
Dissolve sugar in bottom of julep cup by stirring, before adding mint leaves and gently muddling. Swab sides of glass w/mint. Half-fill glass w/crushed ice before adding bourbon and stirring. Fill glass the rest of the way w/ice and stir. Garnish w/mint sprig.

Ingrediens:
- 2oz Whiskey
- 1oz fresh-squeezed lemon juice
- 1tsp sugar
- 1 egg white (optional)

Directions:
Shake all liquids w/ice in shaker. Give extra time if including egg white. Strain into chilled glass and garnish w/cherry, orange slice, or nada.

Definition
History/Notes:
Originated as tiki drink by "Trader Vic" Bergeron using 17-year-old Jamaican rum.

Ingredients:
- 2oz Jamaican rum (Appleton extra), or alternatively, 1oz light rum plus 1oz dark rum.
- Juice of 1 medium lime/about 1oz
- 1/2oz curacao
- 1/4oz orgeat
- 1/4oz rock-candy syrup
. Simple syrup w/drop or two of vanilla extract)
- Mint garnish

Directions:
- Shake all ingredients w/ice and strain into old-fashioned glass w/crushed ice. Garnish/lime shell and mint sprig.

History/Notes:
Originally from the caribbean, morphed over time- now considered ancestor of many tiki drinks and punches now popular.

Ingredients:'- 3oz Coruba dark Jamaican rum (or sub other dark, heavy rum)
- 1oz simple
- 3/4oz fresh lime juice

Notes:
Essentially a vodka sour. Same kind of formula as sidecar, whiskey sour, margarita, and daquiri- base spirit + citrus + sweetener.

Ingredients:
- 1 1/2oz citrus-flavored vodka
- 1/2oz triple sec (Cointreau)
- 1/2oz cranberry juice
- 1/4oz fresh lime juice
- Orange twist for garnish

Directions:
Add liquids to shaker filled w/ice and shake. Strain into chilled glass and garnish w/orange twist.

Pisco Sour
Definition
Notes:
Pisco = a type of South American Brandy with complex, earthy flavor, and heady floral perfume. It's been Peru's signature drink for decades.
Brandy = Spirit produced by distilling wine. Usually about 35-60% abv.

Ingredients:
- 3oz pisco
- 1oz fresh squeezed lime juice
- 3/4oz simple
- 1 fresh egg white
- 1 dash Angostura or Amargo bitters

Directions:
Shake pisco, lime, simple, and egg white in cocktail shaker w/o ice until egg white is foamy. Add ice and shake again. Strain into chilled glass before dashing bitters on top of the egg white.

History/Notes:
Collinses are a class of cocktails which call for a spirit, simple, lemon juice, and soda water. Tom Collins uses Old Tom gin.

Ingredients:
- 2oz gin
- Juice of 1/2 lemon
- 1tsp (superfine) sugar
- Club soda, chilled

Directions:
Stir gin, lemon, and sugar in a Collins glass until sugar is dissolved. Fill glass w/ice and top w/club soda.

History:
Arose in Detroit during Prohibition but was forgotten about for decades before recently reappearing in Seattle. Now more popular than ever before.

Ingredients:
- 3/4oz gin
- 3/4oz fresh-squeezed lime juice
- 3/4oz maraschino liqueur
- 3/4oz green Chartreuse

Directions:
Combine ingredients in cocktail shaker w/ice and shake. Strain into chilled glass.
