Melt butter in pan. 

Add generous slice of gorg.

Mix.

Add cream and spring of sage.

Let cook for a few minutes; stirring.

Add pinch of salt and fresh nutmeg.

Add more cream.

Remove sage.

Mix in penne.

Top with grated parm/reg.

Serve

Taleggio and polenta
Definition

Polenta and water. Cook for one hour in pot.

Stir.

Add chunks of taleggio.

Stir until melted and mixed.

Add butter.

Top with grated parm/reg.

Saint Maure Chevre Pizza with fresh roasted red peppers
Definition

Sourdough pizza dough - let rise twice.

Roll; brush with EVoo

Fresh roasted peppers, chevre and pepper.

Cook until nice and brown.

Gnocchi Pecorino Toscano
Definition

Rolling crushed walnuts, flour, pecorino toscano, salt, nutmeg and 1 egg into a dough to make gnocchi. Cut into small pieces.

 

Boil in salted water - when float, they aree cooked.

 

Sauce: heat butter, add milk, rosemary and grated pecorino toscano. Bring to boil. Add more milk.

 

Add a dash of olive oil; add gnocchi.

Definition

In blender:

 

Garlic, salt and start blending.

add EVOO and then fresh basil leaves.

 

Add pine nuts and more EVoo.

 

Then pec/romano and pec/toscano - equal grated amounts.

 

Perfect on pasta or bread.

Definition

Butter bread on both sides.

Add chopped leeks, chopped raw onion and shredded Montgomery's cheddar.

Grill.

Chez Roger's Fondue Camembert
Definition

Garlic, thyme, parsley

 

Blanche garlic for 5 minutes. Insert into camembert, still in box.

Top with red wine. Work it into cheese. Top with herbs that you have on hand.

Top with more wine, ground pepper.

Put in oven 200c for 10 minutes.

Definition

Rub pot with garlic.

Add Jura wine (if in Jura - white if not)

3 different ages of comte added and melted.

Definition

2 eggs mixed with cream. Pepper, salt and nutmeg added. Another splash of creeam.

 

In pastry shell, add pear and cheese. Top with cream mixture.

Bake in oven at 200C for 20 minutes.

Cream and roquefort, make a creamy mixture.

Mussels in shell.

Top with cream mixture.

Under grill to brown for 5 minutes.

Definition

EVOO

3 layers of phyllo in bottom of pan

Add greens, feta EVOO, pesto.

Layer with phyllo.

Add greens, feta, EVOO, pesto.

Repeat until pan is full.

Score in rows.

Bake 45 minutes.

Multi-Layered Potato and Barrel Aged Feta Bake
Definition

Sliced Potatoes, Pepper, salt, tomato sauce, red onion, sliced squash.

 

Then top with feta and mint.

Then tomato sauce and EVOO.

Repeat.

Bake 45 minutes.

Shallow fried in EVOO until golden and inside is creamy and melted.

Definition

Bread crumbs or potatoes mixed with melted Laguiole

Cooked over open fire.

Ready when long ribbons of mixture can be stretched.

Serve with grilled meats.

Slice horizontally

Melt under broiler until melted, bubbly and brown.

Pour over potatoes and other veggies.

Remove foil and top.
