Ex: lactose intolerance, PKU

 

2. Idiosyncratic

 

-Adverse rxn to a food due to unknown mechanism

Ex: sulfite-induced asthma, aspartame-induced migrane, MSG-induced asthma

-Antigen: Protein in food

-Production of specific antibodies (IgE) by body against ingested protein

-Antibodies cause release of cellular chemicals which produce allergic rxn
